The quality of real Manuka Honey  is mainly determined by the MGO  (Methylglyoxal) content of the Manuka Honey  in question.
The MGO  content largely determines the strength of the Non-Peroxidic Activity of the Manuka Honey. Non-Peroxide Activity that is being enhanced by synergy with certain other components in the Manuka Honey.
